Our Story It All Started With A Mid-Life Crisis or Two! Cat Wearp and Sylvia Mcgrath, Each Originally Hailing From Opposite Coasts, Met During Their Attendance At the Culinary School of the Rockies in Boulder, CO. It Was Their Intent To Further Their Lifelong Interests in Food and Cooking by Taking A Culinary Arts Program. Where the Future Would Take Them Was Unsure, Even As They Graduated in December 2008. All They Knew Was That A Whole New Adventure Was About To Unfold! Sylvia Wanted To Start A Catering Business in Fort Collins, and Cat’s Intent Was To Start A Catering Business in Oregon. As Fate Would Have It, There Wasn’t Any Kitchen Space Available To Rent in Fort Collins and Cat’s Plans Were Put On Hold. When an Opportunity To Lease A Restaurant Arose in March 2009, the Two Put Their Heads Together and Decided To Jump On the Opportunity and Become Business Partners. Who Would Have Ever Thought That These Two Women With Such Different Backgrounds, Would Come Together and Create A Joint Vision of Food and Service in Fort Collins? They Feel Lucky To Have Been Able To Overcome Their Fears and Follow Their Dreams and They Encourage Others To Do the Same. Both Share A Passion for Cooking Fresh, Healthy Food Incorporating Local Products Wherever Possible. They Decided To Bring That Passion To the Cilantro Grille, Maintaining the Mexican Theme of the Previous Restaurant While Adding A Style All Their Own. Yes, There Is A Big Chain Restaurant in the Same Block and the Restaurant Opened in A Bad Economy. Crazy? Maybe So, But Sylvia and Cat Believe Strongly in the Quality and Love That Goes Into the Food At Cilantro Grille. Their Goal Is To Provide Meals With Home-Made Freshness At A Price That Is Affordable in A Restaurant That Is Cozy and Comfortable. They Believe This Goal Has Been Achieved and That Everyone From Csu Students, Csu Faculty, Business People, and Families Who Make Up Their Wonderful Neighborhood Has A Nice, Cozy Place To Enjoy A Good, Fresh Meal. It Is Their Pleasure To Serve You With Friendliness and A Smile! Our Hours of Operation Are Mon - Sun From 10 Am Until 10 Pm.
